OK friends, since it’s back-to-school season and I know you’re all working your butts off to get yourselves into fall (aka reality) mode, I’m giving you a free week of Project Vibrancy Meals meal plans.

You know that I love – LOVE – sharing recipes here with you on Fresh Tart. Nothing makes me happier than when I get a note from you telling me how much you love a recipe and that you make it for your loved ones or guests. (I love doing those things too – in fact, I’m cooking dinner for my son and his girlfriend tonight and I couldn’t be more excited!)

But it also feels amazing to feed people food that is good for them. Oh sure, it’s a blast to pull out all the stops and rain decadence down on a holiday. I am all about a seriously buttery Thanksgiving, lol.

However, it’s satisfying on a primal level to provide nourishment that sustains and heals – I know that you know what I mean. There is nothing more rewarding than nursing someone back to health if they’ve been ill, or feeding your growing child nutritious meals. If it’s delicious and well-loved to boot? Jackpot.

And oh hey, what if it also makes your life easier AND saves you money?

That’s why I stepped away from blogging a couple of years ago and turned my attention to developing Project Vibrancy Meals meal plans.

I had so many of you asking for meal plans so that you could regularly make and eat the fresh and flavorbomb autoimmune protocol/healthy meals that I was making and sharing on Instagram.

I didn’t come up with the idea – you did!

You asked me to map it all out for you: menu, shopping list, seriously delicious yet easy recipes, clean-up instructions, storage instructions, all of it.

You were tired of buying and wasting food that you didn’t prepare. You were tired of eating too many meals from restaurants or the grocery store that you knew were expensive and not that great for you or your family.

Or you were trying to implement the autoimmune protocol and feeling bored with the food at best or completely overwhelmed at worst.

So that’s why I created Project Vibrancy Meals as a meal planning system based on a batch cooking session because it is the very best way to consistently make and enjoy amazing and fast meals all week long.

Project Vibrancy Meals isn’t for everyone, I am the first to admit it. You have to be the type of person who can set aside a few hours on the weekend to batch cook food. Can you commit to that, knowing that the rest of the week your meals will be ready in minutes? It’s an investment/reap-the-benefits-later type of scenario and that doesn’t suit everyone. That’s why I offer a free meal plan, so that you can give it a test run and see how it feels.

Pork Tenderloin Souvlaki (or Chicken Souvlaki for Pork Free)

Celeriac Rice (or White Rice)
Roasted Beets
Grilled Pineapple Salsa

Week Three Menu

Saturday or Sunday (Batch Cook Day)
Souvlaki Skewers with Celeriac Rice and Greek Salad

Monday
Stuffed Zucchini with Tomato, Beet & Cucumber Salad (or Beet & Cucumber Salad for AIP)

Tuesday
Baja-Style Fish Tacos (with Plantain or Purchased Tortillas)

Wednesday
Pork Tenderloin Hash with Poached Eggs (or Avocado for AIP/Egg Allergy)

Thursday
Big Ol’ Salad

Friday
Greek Healing Green Broth Soup

On this week’s Facebook Live, I talked about Eating for Great Skin & Anti-Aging. Someday I’ll share skincare products with you all, because you ask me often, but waaaaaaay more significant and important is caring for skin from the inside out.
