poached egg bacon vinaigrette pork belly gluten-free pancake

I worked out this decadent, completely over-the-top (gluten-free!) dish with the help of friends Andrew Zimmern, Scott Pampuch, and Ken Okumura. A delicious, collaborative blast.

Recipe for Poached Egg, Crispy Pork Belly, & Watercress on Rice Flour-Potato Pancake with Bacon-Maple Vinagrette (whew!) at Dara & Co./Minnesota Monthly Magazine. Have at it!

PS I realize that’s two poached egg posts in a row. I’ll give it a rest for awhile, I promise.

Awesome Anna! It's a blast to make, each element stands alone as YUM. I sure had fun putting it all together, so I hope you do too, and that your boyfriend LOVES it. Cool!

Xiaolu - Ha! I think poached eggs are auto-food-porn, every time, which is why I have so much fun with them. Thank you, yes, good!

OhSoSmitho - Thank you. I certainly enjoyed. My family too. Ready for Round II!

Lauren - Ha! Really...not hard to make. Leftover pork belly is a nice thing, works its way into many dishes, perhaps you should go for it!

Terris - It all comes together in a pretty killer way. My son added a second pancake to make a sandwich of it...very late-night worthy :) Thank you!

Wow great capture of the egg yolk dripping down. That's what I call food porn ;p. But seriously this looks like good food =).
